The Agata potato is a variety of potato originating from the Netherlands. It is mainly grown in southern Europe: in France, Spain and Italy. Registered in the French Official Catalogue of Plant Species and Varieties (a mandatory condition for its marketing) since 1990, the Agata has since become a staple of French cuisine.

The flesh is firm and yellow in colour. The agata is eaten exclusively cooked and is cooked in a variety of ways: steamed, baked, pan-fried and sautéed.

Storage method :

Agata potatoes harvested when fully ripe can be stored for up to 12 months in a closed, dark, cool (between 4 and 6°) and moisture-free place.
Temperature : 8-12°C – Optimum humidity : >80% – High sensitivity to light (greening)
