Calico Artichoke

The **Calico Artichoke** is an early vegetable variety called “Camus Breton,” belonging to the Asteraceae family. Originating from the Western Mediterranean, the Calico Artichoke presents as a voluminous ball composed of matte, scale-like, grey-green leaves with a tender heart in the middle. It is consumed in various forms, primarily cooked (never raw): steamed, boiled in water, or cooked in a pressure cooker. Its flesh is fine and refined, appealing with its savory and mild taste.

The artichoke is very low in calories and also offers many health benefits. It is rich in vitamins, fiber, and minerals.
