The **Muscat Squash** (*courge musquée Muscade*) is a vegetable belonging to the Cucurbitaceae family. It is a very sprawling (“trailing”) and late-harvest variety. Its fruit, measuring between 25 to 50 cm and weighing 5 to 10 kg, is flattened and ribbed, with a dark green color. Its flesh is flavorful, bright orange in color, and has a dense, firm, and thick texture, possessing a slightly sweet and musky taste.
Muscat squash can be consumed in several ways, primarily in savory preparations, namely: in purée, soup, gratin, quiche, and pie, but also in sweet preparations like desserts and jams. Furthermore, it offers highly interesting nutritional benefits: it is low in calories, rich in vitamins A, B2, B5, B6, B9, C, K, iron, manganese, copper…
