The **persimmon** is the fruit of the persimmon tree (Plaqueminier), and its name originates from the Japanese language.
Its cultivation is starting to develop in the Mediterranean basin, although it still struggles to find its place with consumers.
The family consists of two varieties: the persimmon, which is orange in color with an astringent flesh, and the “kaki-pomme” (apple-persimmon), which is red.
Available from October to January, this round fruit with smooth skin is sweet or tart. It is rich in fiber and has antioxidant properties.
