Bananenschalotte

The Echalion is a variety of onion to be distinguished from the common shallot; it is a variety of onion crossed with a shallot. This aromatic vegetable, native to Asia or Europe, is one of the most appreciated in France. It has a round shape tapering into an elongated form and is covered with a thin layer of dried, brownish skin.

In terms of taste, the Echalion strikes a balance between the flavour of the shallot and the sweetness of the onion. In other words, it is neither too pungent nor too mild. However, it releases a particularly pronounced and strong aroma. It can be eaten raw in salads or cooked in stews; it is also delicious roasted whole (in a tart, for example).

The Echalion is rich in vitamins B and C, as well as zinc, iron, potassium, calcium, and fibre.
