Romanesco

Romanesco broccoli is a variety of cauliflower belonging to the cruciferous family. Originating in Rome, Italy, it is very popular in Italian cuisine. Also known as “Romanesco cauliflower” or “Roman cauliflower,” it presents a distinctive shape that commands admiration. It is structured as an assembly of green, pyramidal “florets” arranged in spiral crowns.
