Sweet Potato

The **sweet potato** is a tuber belonging to the bindweed family. Mainly cultivated in tropical regions, the sweet potato found in the French market is mostly imported from Spain and the islands. It appears as a tuber covered with a reddish-purple skin enveloping flesh ranging from white to orange, adding color to dishes. Its popularity continues to grow, and for good reason: with a distinctive and slightly sweet taste, it cooks equally well in savory preparations (in velouté, mashed, in gratin) as it does in sweet desserts.

The sweet potato is also a vegetable that is very low in calories and very rich in vitamins, antioxidants, and minerals. It is available on market stalls all year round.
