Chicory

**Belgian Endive**, the common name for Witloof chicory, is a winter vegetable originating from Northern France. This vegetable, which has a crunchy texture when raw and a melting texture when cooked, enhances any dish.

Raw, endive is served in a naturally crunchy and delicious salad. Once cooked, steamed or pan-fried, it presents a slight bitterness on the palate, thus enhancing many dishes: cream soup, chiffonade, toast, etc. Moreover, endive perfectly complements all meats and offers numerous health benefits.
