**Purple garlic**, better known as “L’ail de Cadours” (Cadours garlic), is an early market garden plant belonging to the Allium family (*Alliaceae*). Native to the Haute-Garonne region, where it is extensively cultivated, it presents as a purplish bulb. Furthermore, this designation has been granted a protected designation of origin (AOC) since 2015 and a protected original designation (AOP) since 2017.
Purple garlic is widely consumed in France, where it is appreciated as much for its taste qualities as for its numerous health benefits. Rich in vitamins and antioxidants, it contributes above all to making dishes much more flavorful and delicious.
