**Red onion** presents a more pinkish or light purple color. This variety is very similar in taste to the yellow onion, while distinguishing itself with a stronger and more pronounced taste on the palate. Compared to other onions (yellow or sweet), the red variety is produced in much smaller proportions and is rarer to find in market stalls.
The red onion is ideal for serving as a base for aesthetically pleasing and colorful dishes. Its main varieties are: Rouge de Brunswick, Rosé de Roscoff.
